But here’s where the travel twist comes in. All summer long, I pass by Buttonwood Farm Ice Cream in Connecticut, a true local foodie gem that’s worth pulling off the road for. From peanut butter ice cream to their graham cracker ice cream, Buttonwoods is a destination in itself. It was actually their graham cracker ice cream that inspired me to create this recipe—the base of my Magic Cookie Bar Ice Cream starts with a graham cracker ice cream that makes the whole treat taste just like the holidays.
So when the idea for Magic Cookie Bar Ice Cream came to me, I couldn’t help but think of all the times food and travel intersect. Sometimes it’s a trendy new restaurant in a city you’ve been dying to explore. Other times, it’s a food truck on the side of the road serving up the best tacos of your life. And sometimes, it’s as simple as churning something in your own kitchen that takes you right back to your favorite trip.

Magic Cookie Bar Ice Cream
Ingredients
- 2 Eggs
- 2 Cups Heavy Cream
- 1 Cup Sweetened Condensed Milk (Cold)
- 24 Whole Grham Crackers
- Coconut
- Chocolate Chips
- Chopped Walnuts

Method
- Dissolve graham crackers in heavy cream.
- Whisk eggs until they are light and fluffy.
- Strain the heavy cream from the graham crackers. If the graham crackers dissolve well you don't have to strain it.
- Whisk in sweetened condensed milk into the heavy cream mixture.
- Whisk the heavy cream mixture in with the eggs.
- Add to an ice cream maker and follow the manufacturer's instructions.
- Once the ice cream is stiff, add your desired amounts of coconut, chocolate chips, and chopped walnuts.
