Magic Cookie Bar Ice Cream: A Sweet Travel-Inspired Treat


Let me hear you if you’ve ever indulged in one too many Magic Cookie Bars during the holiday season? Now—imagine that flavor, but churned into creamy ice cream. Yes, my friends, Magic Cookie Bar Ice Cream is real, and it’s every bit as indulgent as it sounds.


Every Christmas, my mom bakes a batch of Magic Cookie Bars for my husband. And even though we’ve spent the entire month eating our way through the holiday table, we somehow manage to squirrel away these bars—like chipmunks prepping for winter storage. They’re that irresistible.


But here’s where the travel twist comes in. All summer long, I pass by Buttonwood Farm Ice Cream in Connecticut, a true local foodie gem that’s worth pulling off the road for. From peanut butter ice cream to their graham cracker ice cream, Buttonwoods is a destination in itself. It’s the kind of place that makes road trips memorable—not just for the scenery, but for the flavors you discover along the way. It was actually their graham cracker ice cream that inspired me to create this recipe—the base of my Magic Cookie Bar Ice Cream starts with a graham cracker ice cream that makes the whole treat taste just like the holidays.


So when the idea for Magic Cookie Bar Ice Cream came to me, I couldn’t help but think of all the times food and travel intersect. Sometimes it’s a trendy new restaurant in a city you’ve been dying to explore. Other times, it’s a food truck on the side of the road serving up the best tacos of your life. And sometimes, it’s as simple as churning something in your own kitchen that takes you right back to your favorite trip.


At Road and Table, we chase down both journeys and bites. From truffle hunting in Tuscany to lobster rolls in  Connecticut, we’re passionate about showing you how travel and food go hand in hand. This recipe is just one more way to bring the world to your table—even if you’re not boarding a plane.


So go ahead, dust off your ice cream maker, and get ready to whip up a little holiday-inspired, travel-worthy dessert. One bite and you’ll see: whether you’re wandering a new city, pulling off at a roadside creamery, or curled up at home, food really is the best souvenir.

Magic Cookie Bar Ice Cream

Ingredients

  • 2  Eggs
  • 2  Cups  Heavy Cream
  • 1  Cup Sweetened Condensed Milk (Cold)
  • 24 Whole Grham Crackers
  • Coconut
  • Chocolate Chips
  • Chopped Walnuts

Method

  1. Dissolve graham crackers in heavy cream.
  2. Whisk eggs until they are light and fluffy.
  3. Strain the heavy cream from the graham crackers. If the graham crackers dissolve well you don't have to strain it.
  4. Whisk in sweetened condensed milk into the heavy cream mixture.
  5. Whisk the heavy cream mixture in with the eggs.
  6. Add to an ice cream maker and follow the manufacturer's instructions.
  7. Once the ice cream is stiff, add your desired amounts of coconut, chocolate chips, and chopped walnuts.
