Taste of The Holidays: Magic Cookie Bar Ice Cream

Let me hear you if you indulge in one too many magic cookie bars during the holiday season? Imagine….Magic Cookie Bar Ice Cream….Yes, my friends it’s a thing, and oh my is it, oh…so….good!


Every year at Christmas my mother makes my husband a batch of Magic Cookie Bars, and even though we have eaten way too much over the course of a month, we some how manage to shove those babies in, like chipmunks getting ready for the winter!


All summer long, I drive past our local ice cream heaven, Buttonwood Farm Ice Cream, and I have to convince myself not to pull in! Between their peanut butter ice cream, and their graham cracker ice cream, I just can’t get enough!

I can’t even tell you how I thought of Magic Cookie Bar Ice Cream, but I kind of hate myself for it! It was really good, like get out your ice cream maker and get to churning ASAP good!

Magic Cookie Bar Ice Cream

Ingredients

  • 2  Eggs
  • 2  Cups  Heavy Cream
  • 1  Cup Sweetened Condensed Milk (Cold)
  • 24 Whole Grham Crackers
  • Coconut
  • Chocolate Chips
  • Chopped Walnuts

Method

  1. Dissolve graham crackers in heavy cream.
  2. Whisk eggs until they are light and fluffy.
  3. Strain the heavy cream from the graham crackers. If the graham crackers dissolve well you don't have to strain it.
  4. Whisk in sweetened condensed milk into the heavy cream mixture.
  5. Whisk the heavy cream mixture in with the eggs.
  6. Add to an ice cream maker and follow the manufacturer's instructions.
  7. Once the ice cream is stiff, add your desired amounts of coconut, chocolate chips, and chopped walnuts.
