Fish Tacos with Mango Avocado Salsa

Fish tacos….Well all I can say about fish tacos is that I never liked them. To be really honest I never tried them until recently. Fish and tacos in my mind just didn’t go together.


One night I was invited to a local caterers 30th anniversary party and they had fish tacos. I tried one and OH MY!!! I FELL IN LOVE!!! I couldn’t stop eating them! Ever since I have been hooked. I find myself ordering them when we go out and I just can’t get enough!


I tried my hand at a batch one night and they were good but they weren’t great. I didn’t season the fish enough and I wasn’t able to make the salsa I wanted since my avocados were rotten. I hate that!!


So a week later fish tacos found their way right on to my meal plan again. I was feeling extra ambitious so I made homemade flour tortillas to go with them. They came out AWESOME. I must say as my husband and I were eating them we just kept saying “wow, these are REALLY good”!!


First let’s start with the tortillas. Don’t be afraid. They were extremely easy and they didn’t take much time to prepare. Have you ever read the ingredients on the bag of flour tortillas?!?! OUCH! Trust me now that I have made these I don’t see myself buying tortillas from the store anytime soon. I had a few left over and I kept them in the fridge. They weren’t as good as warm off the griddle but they were still delish! Go over to The Mama’s Girls and check out the recipe be sure to leave a comment if you enjoyed them!! I sure did.

Here’s my recipe for fish tacos……


FISH TACOS

Flour Tortillas

I used my pancake griddle to cook them and it worked great!

Mango Salsa

  • 2 mangos
  • 1 avocado
  • 1/4 cup cilantro
  • 8oz of pineapple

Coleslaw

Coleslaw preparation
  • 1 bag of coleslaw mix
  • 1 tbsp honey
  • juice of 1/2 a lime
  • 1/2 cup of cilantro, chopped
  • salt
  • pepper
  • 1/2 cup of plain yogurt
  • 1/2 cup of sour cream
  • 2 garlic cloves, minced

Fish

fish  preparation
  • 2 pounds of Cod
  • salt
  • pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp Hungarian paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 1/2 tsp ground cumin
  • pinch of cinnamon
  • juice of 1/2 a lime

First make the salsa.

1. Dice the mango, avocado, cilantro and pineapple. Mix all together.


Next make the coleslaw.

1.Rinse the coleslaw

2. In a small bowl mix together the honey, lime juice, cilantro, garlic, yogurt and sour cream. Salt and pepper to taste.
3. Pour the dressing over the coleslaw mix and stir until well combined.

Now it’s time for the fish.

1. Mix all the ingredients except the fish together in a small bowl.

2. Rinse the fish and be sure to pat it dry. Rub the mix all over the fish.

3. Heat a pan on the stove over med-high heat with a bit of oil and fry the fish until cooked about 3 mins on each side. (That’s the best part about cooking fish, it’s quick!!)

Remove the fish from the pan and place a small piece of fish on your tortillas and then top with coleslaw and mango salsa! YUM YUM!!! Try not to eat too many!!!
